Individual Meatloaf Bundles

Meatloaf meet Bacon, Bacon, meet Meatloaf.  You will get along like apple pie and ice cream do, you will marry like Lucille Ball and Desi Arnaz.  Three cheers for love (of bacon)

Today's dinner came from my all time love of bacon.  I LOVE it, I know its not good for you, but I can't help it!
Who doesn't enjoy a BLT (I do minus the T), or a good ole grilled cheese and bacon sandwich? 
You know when you go to an all you can eat buffet the first thing you do is to swing nonchalantly by the bacon tray to to see if its crispy or saggy and then you grab yourselves a wad - you cant help it, its SO good!
Ok, maybe that's just me - see, I have faults. 

Tonight we meld my love of the pork fat with Little Ugh's favorite - The Meatloaf.
Throw in some fresh green beans, some thyme infused scalloped potatoes and you got yourself a winning combo!
I want bacon and eggs for breakfast...just sayin

Individual Meatloaf Bundles (or Bacon Extravaganza Bundles)


1 lb ground pork
3 tbsp. Sweet Baby Ray's Honey BBQ sauce + more for basting
1 tsp. dried thyme
1 tsp. onion flakes
1 tsp. granulated garlic - not garlic salt
1/2 tsp. ground pepper
1/2 c. rosemary foccacia bread crumbs (or regular crumbs will do)
25 half slices of thick bacon







In a bowl add the all of the ingredients and mix by hand. 

 
 
Cut your bacon in half.  Lay out 4 strips lengthwise and weave 1 strip in the middle to ensure everything holds together well - you wouldn't want your meat to fall out, it wouldn't be a bundle then!



Next, grab a fistful of meat and form it into a log in the middle of the bacon.



Roll, and as you roll, pull the meat towards the back to form a long, uniform package.
Place on a rack over a baking tray



Brush some Sweet Baby Ray's Honey BBQ sauce over top and place in a preheated oven (375)



Bake for 45 minutes.  Half way through baste again with bbq sauce.

 
 
A few more minutes and this will be passing your dripping lips and into your welcoming stomach!
Once removed from the oven, let rest 10 minutes

Make sure you serve this with lots of veggies so you don't feel bad for eating 2 bundles :)
